Dear people, the grilling culture here has a lot to do – it’s a regrettable fact that has been seen over the last hot weekends with the obligatory BBQ invitations: unseasoned chicken breasts are still grilled and pampered until finally dry. Or you can quickly get one of those weird orange ready-made marinated pieces of meat at the supermarket. Well, maybe you can cover everything in the end with ready-made Heinz sauce.
People! There is still room for improvement! We can do better.
It doesn’t mind a good sausage, but with a little effort you can get a lot more from your barbecue evening. The keyword is: Marinate!

- There are many versions of pickles: sweet, sour, spicy, vinegar, oil or yoghurt-based, and and and.
- How long the grilled food must be marinated depends of course on the recipe. But in general: beef, lamb or pork can be marinated for 6-12 hours. Poultry up to 4 hours. Fish and vegetables approximately 30 minutes to 1 hour. If the marinade contains a lot of lemon juice, vinegar or other acid, it should not be marinated for too long (less than 2 hours).
- Is the barbecue party spontaneous and the marinades for the night in the fridge are not included in the cards? Hey, even half an hour is better than nothing, especially since you can (and should!) Sprinkle the remaining marinade on the pieces while grilling.
- You can mix everything in a bowl and add meat (or meat substitute). But resealable bags for storing fresh goods are best for this. So the marinade goes everywhere. And it feels so good to push it. mmm

So here they come: 9 super delicate, super easy marinades to save summer grilling!
Moroccan pickle
Perfect for:
(Of course, it is always about suitable, suitable meat alternatives).
Ingredients:
(All ingredient lists reflect portions for 4 people roughly. More or less.)
- 4 tablespoons of olive oil
- 2 tablespoons of fresh lemon juice
- 3 cloves of garlic, pressed
- 1 tablespoon fresh ginger, peeled and finely chopped
- 1.5 teaspoons of ground cumin
- 1 teaspoon of ground coriander
- 1 teaspoon of paprika
- 1/2 teaspoon of ground cinnamon
- 1/2 teaspoon turmeric
- 5 tablespoons chopped fresh cilantro (plus more to serve)
- Salt and freshly ground black pepper
Preparation: Unless otherwise stated: mix all ingredients. Food to be grilled in a freezer bag or similar. let’s pickle. Drain the food to be grilled before placing it on the grill. While grilling, glaze the grilled food with the remaining marinade.
Indian yoghurt marinade from cashew nuts
Down:
- Lamb (lamb chops work very well for this), beef, and grilled vegetables
Ingredients:
- 4 tablespoons of cashews briefly roasted in a dry frying pan
- 500g of Greek yogurt
- 3 green chillies
- 1 tablespoon of grated ginger
- 2 tablespoons of pressed garlic
- 2 teaspoons of ground cardamom
- 1 teaspoon ground mole (= ‹mace›) or 2 flowers
- 2 tablespoons of lemon juice
- 2 tablespoons of mustard oil (you can find it in your Asian market)
- salt for flavor
- for serving: fresh mint, finely chopped
Put the cashews in a blender, just add water and puree. Add all other ingredients and puree.
Mojito marinade

Ingredients:
- 8 ml of white rum
- 5 tablespoons of fresh mint, chopped (15 g)
- 1 garlic clove, finely chopped or crushed
- 1 teaspoon of rock salt
- 1 teaspoon of freshly ground black pepper
- Juice of 2 limes (plus 1-2 more limes for decoration)
- 1 tablespoon of olive oil
Black pepper vodka marinade

- Beef tenderloin steaks and other barbecue-friendly cuts of beef.
Ingredients:
- 1 teaspoon of sea salt
- 2 tablespoons of black peppercorns, crushed in a mortar and pestle
- 3 tablespoons of finely chopped prezzemolo (parsley)
- 2 tablespoons finely chopped fresh thyme (or 1 teaspoon dried thyme)
- 3 cloves of garlic, pressed
- 80 ml of vodka
- 60 ml of olive oil
Balinese marinade

Ingredients:
- 1/2 star anise
- 1 thumb-sized piece of fresh ginger, peeled and roughly chopped
- 1 chili
- 7 cloves of garlic
- 2 tablespoons green curry paste from the jar
- 1 teaspoon of paprika
- 2 teaspoons of cinnamon powder
- 60 ml of soy sauce
- 35 ml of apple or malt vinegar
- 5 tablespoons of honey or (better) palm sugar
- 150 ml of tomato passata
Put all ingredients in a blender and puree.
Hawaiian pineapple marinade

- Pork, poultry (e.g. skewers …)
Ingredients:
- 250 g of crushed pineapple pieces
- 80 ml of soy sauce
- 80 ml of honey
- 60 ml of apple cider vinegar
- 1 to 2 cloves of garlic, chopped
- 1 teaspoon of powdered ginger
- ½ teaspoon of ground cloves
Gently crush the pineapple in a mortar; add the remaining ingredients and mix.
While grilling, glaze the grilled food with the remaining marinade.
“Pretty tacky, but unfortunately nice” marinade
